ANAHEIM - NEW MEXICAN
These
are the peppers also know as New Mexican or Chile Colorado. Sometimes
in recipes they are just called Green Chiles. Only medium hot, they are
often used for Chile Rellenos. If you have a dry climate, you can also
string the red ones for a "ristra", the long strings of dried chiles you
see in the Santa Fe area.
